"泰芮" is a transliteration of the restaurant's name, Taïrroir, reflecting Chef Kai Ho and his team's creative and detail-oriented attitude. Their approach, whether in terms of creativity, attitude, or technique, is like the ever-growing iris in spring, constantly evolving and expanding. Taïrroir, a self-created word rich in meaning, is a fusion of "Taiwan" and "Terroir" (French for terroir or landscape), symbolizing a new way of thinking that transcends national boundaries. It represents the fusion of the essence of Taiwanese cuisine, releasing diverse energies in a magnificent way, hoping to offer guests a unique experience and conveying the message of "Discovering the world in Taiwan, letting the world see Taiwan." In the tranquil space of Dazhi, Taipei, they reinterpret the warm memories of Taiwan's local culture with exquisite French culinary techniques.

"Deconstructing Taiwanese soul and terroir through French culinary techniques."
Chef Kai Ho leverages sharp intuition and local passion to deconstruct Taiwanese night market snacks, banquet dishes, and home-cooked memories using precise French techniques. Under his leadership, Taïrroir was awarded three Michelin stars in 2023, becoming the world's first modern Taiwanese restaurant to achieve 3 Michelin stars.
